Breville Smart Oven Chocolate Chip Cookies
The Breville Smart Oven’s element IQ technology bakes a batch of chocolate chip cookies with crispy edges and gooey centers in 11 minutes flat — consistently, without the hot spots that plague full-size ovens. After testing this recipe against an identical batch in a Wolf oven, the countertop result was indistinguishable from the $6000 flagship.
Why the Breville works so well for cookies
Element IQ actively adjusts the top and bottom heating elements during the bake — more bottom heat when the dough first hits the stone, then shifting to top heat once the tops begin browning. Conventional ovens heat statically, which is why classic oven recipes call for rotating the sheet halfway. With the Smart Oven, no rotation is needed.
The brown butter step
Brown the butter to the deep amber stage (not just golden) and chill it back to semi-solid before creaming with sugar. This one adjustment adds a nutty depth that turns a generic chocolate chip cookie into a restaurant-quality one. The browned milk solids are what you taste.
