Naan is the ideal base for a countertop oven

Traditional pizza dough needs a 500°F+ stone and a 10-minute cook to develop crust and chew. A countertop oven tops out at 450°F and can’t hold that heat under an open door. Store-bought naan solves both problems: it’s already fully baked, the bottom hydration is low enough to crisp in 3 minutes, and its pliable interior soaks up egg yolk without going soggy. The egg is the crux

Crack the egg directly onto the naan WHITE FIRST — tilt the shell so the white runs onto the dough, then place the yolk in a small divot pressed into the cheese. This separates the cook times: the white sets in 4 minutes, the yolk stays runny past 6. If you crack the egg whole in the center, the yolk cooks through before the white finishes setting on the edges.

Ingredients

  • 1 piece garlic naan
  • 2 tbsp marinara sauce or pesto
  • 1/3 cup shredded mozzarella
  • 1 large egg
  • 2 slices prosciutto or bacon (cooked)
  • 1 tbsp grated parmesan
  • Fresh arugula for topping
  • Cracked black pepper
  • Flaky sea salt

Instructions

  1. Set Breville Smart Oven to 425°F on Pizza setting. No preheat needed for this recipe.
  2. Spread marinara or pesto evenly over the naan, leaving a 1/2-inch border.
  3. Sprinkle with shredded mozzarella, then press a small divot in the center of the cheese.
  4. Tilt an egg shell over the pizza so the egg white runs out first onto the cheese, then drop the yolk into the divot.
  5. Add prosciutto or bacon around the edges and dust with parmesan.
  6. Place directly on the rack (no pan) and bake for 4-5 minutes until the white is set but the yolk is still runny.
  7. Top with fresh arugula, cracked pepper, and flaky salt.
  8. Slice and serve immediately.
